The Jerusalem Artichoke, also known as sunroot or sunchoke, is neither from Jerusalem, nor is it an Artichoke! Go figure! They are actually native to North America and are grown from eastern Canada to northern Florida. The origin of the name is uncertain, but early Pilgrims are said to have named it when they came to the New World, calling it Jerusalem after the 'New Jerusalem' they were creating in the wilderness. The artichoke part comes from the taste of the edible tuber.
